Grape variety: 100 % Chardonnay
Terroir: The Rottensteiner family just started renting out this vineyard from the parish of St. Nicholas in Neumarkt in 2018. Chardonnay vines thrive on the detrital cone of the Truden torrent at about 250 m above sea level. This land has very little humus and is rich in minerals; it contains quite a lot of sand and gravel in proportion.
Colour: Light straw yellow
Production: The ripe grapes are harvested in late September. They are crushed and macerated for 24 hours in the press; afterwards they are lightly pressed. The must is fermented in 500 L oak barrels. The new wine then ages on the lees for another 10 months in these oak (Tounaux) barrels. Chardonnay is bottled in August.
Degustation: The bouquet is reminiscent of ripe tropical fruit: mango, banana, and pineapple. On the pallet it is very soft, warm and full-bodied, and reminiscent of vanilla.
Suggestions: It goes well with white meat, very flavorful fish, Italian cuisine, and the cuisine of South Tyrol.
